BULGHUR CON BESCIAMELLA AL CURRY E UVETTA ACCOMPAGNATO DA BROCCOLI E ZUCCA AI SEMI - BECHAMEL, CURRY AND RAISINS BULGHUR WITH BROCCOLI, PUMPKIN AND SEEDS

Cosa cucinate oggi?

Io burghul!
Ossia frumento integrale sottoposto a un particolare processo di lavorazione: i chicchi vengono cotti al vapore e fatti seccare, poi vengono macinati e ridotti in piccoli pezzetti.

E' molto diffuso in Medio Oriente, è una buona fonte di fibre, vitamine del gruppo B, fosforo e potassio. Ha un indice di sazietà piuttosto elevato, caratteristica comune a tutti i cereali integrali in chicchi.

Il gusto è molto buono, assomiglia un po' al cous cous, ma è più morbido e si presta bene anche per minestre o polpette, oppure in estate è ottimo freddo condito con olive, capperi e verdure miste crude...
Tra l'altro cuoce velocemente quindi è perfetto se non avete molto tempo!

Ingredienti per 2 porzioni:

200 gr di burghul bio
besciamella vegetale (20 gr di olio evo, 20 gr di farina, 250 ml di latte di soia)
1 broccolo bio di medie dimensioni
1 manciata di uva passa
200 gr di zucca bio pulita
1 cucchiaio di semi vari (girasole, sesamo, zucca...)
1 cucchiaino di curry
2 cucchiai di olio evo
noce moscata, sale e pepe q.b.

Lavate e pulite le verdure: dividete il broccolo in cimette, tagliate la zucca a cubetti.
Lessateli separatamente in acqua leggermente salata per 5-7 minuti.
Scolateli passateli in acqua fredda e ghiaccio affinché colore e proprietà nutritive si conservino al meglio.
In una padella tipo wok scaldate l'olio evo, fate saltare broccoli e zucca per qualche minuto a fuoco vivace con i semi misti e un goccio di latte di soia, aggiustate di sale e pepe e tenete al caldo.
Lessate il burghul come riportato sulla confezione (per 200 gr di burghul fate bollire 1 litro di acqua con mezzo cucchiaio di sale. Cuocetelo per 13-15 minuti finché l'acqua si sarà assorbita).
Ammollate l'uvetta in acqua calda ed aggiungetela al frumento.
Intanto preparate la besciamella: scaldate in un pentolino 20 gr di olio evo, aggiungete 20 gr di farina di grano tenero (meglio se tipo 1 o 2, se no andrà bene anche la 0), mescolate con una frusta in modo che non ci siano grumi, quindi versate 270 ml di latte di soia e cuocete finché diventerà densa, tenendo presente che più cuoce più la besciamella si rapprende.
Alla fine aggiustate di sale, aggiungete il curry, un pizzico di noce moscata e una macinata di pepe.
Condite il burghul con la besciamella e impiattate!
Io ho usato un coppa pasta, ma va benissimo anche fare una base di burghul con un cucchiaio e adagiarvi le verdure sopra.

200 gr of organic burghul
vegetable bechamel (20 gr of extra virgin olive oil , 20 gr of flour , 250 ml of soy milk)
1 medium-sized organic broccoli
1 handful of raisins
200 gr of organic cleaned pumpkin
1 tablespoon of various seeds (sunflower , sesame, pumpkin...)
1 teaspoon of curry
2 tablespoons of extra virgin olive oil
nutmeg , salt and pepper q.s.

Wash and clean the vegetables : divide broccoli into florets, cut pumpkin into cubes.
Boil them separately in lightly salted water for 5-7 minutes.
Drain and pass them in cold water and ice, in that way colour and nutritional properties will be preserved.
Heat the olive oil in a wok, saute broccoli and squash for a few minutes on high heat with mixed seeds and a dash of soy milk, add salt and pepper and keep warm.
Boil the burghul as directed on the package (for 200 gr of burghul boil 1 liter of water with half a teaspoon of salt. Cook for 13-15 minutes until all water is absorbed).
Soak the raisins in warm water and add to the burghul.
Meanwhile prepare the bechamel: in a saucepan, heat 20 gr of extra virgin olive oil, add 20 gr of wheat flour (preferably type 1 or 2), stir with a whisk so that there are no lumps, then pour 270 ml of soy milk and cook until it becomes thick, bearing in mind that more it cooks more the bechamel become thick.
At the end add salt, curry powder, a pinch of nutmeg and a pinch of pepper.
Season the burghul with the White sauce and serve!
I used a pastry ring, but you could also make a burghul base with a spoon and lay the vegetables over it.
