TORTA SALATA CON CREMA DI PISELLI PICCANTE E ASPARAGI - SPICY PEAS CREAM AND ASPARAGUS PIE

Oggi tortina salata!
E' un ottimo antipasto, ma se la servite con delle verdure è anche un perfetto secondo!

Asparagi e piselli non sono di stagione, lo so, ma li avevo surgelati mesi fa ed era ora di farli fuori :)
La ricetta è molto semplice, il risultato è davvero squisito!

Ingredienti:

Pasta briseé vegan (vedi ricetta qui)
250 gr di piselli bio cotti
500 gr di asparagi bio
3 cucchiai di lievito alimentare in scaglie
2 cucchiai di pangrattato
2 cucchiai di olio evo
peperoncino in polvere, sale e pepe q.b.


Preparate la pasta briseé e fatela riposare in frigorifero almeno 40 minuti (oppure usate un rotolo di pasta già pronta).

Intanto lavate, pulite e lessate gli asparagi  in acqua leggermente salata per 10 minuti. Scolateli e passateli in acqua fredda e ghiaccio.
Scaldate l'olio extravergine di oliva in una padella capiente, quindi aggiungete gli asparagi, fateli rosolare per qualche minuto a fuoco vivace, condite con sale e pepe. Tenete da parte.

Frullate i piselli cotti, aggiungete il lievito alimentare in scaglie, il pane grattato e il peperoncino, aggiustate di sale e mescolate bene. Se avete del veg-caprino o un altro formaggio vegetale si può aggiungere anche quello, in questo modo la crema di piselli sarà ancora più gustosa!

Oliate uno stampo da torta, spolverate con pane grattugiato, quindi stendete la pasta briseé con un mattarello e adagiatela all'interno dello stampo facendola aderire bene ai bordi.

Riempite con la crema di piselli distribuendola in modo omogeneo.
Quindi coprite con gli asparagi partendo dall'esterno andando verso l'interno in modo concentrico, oppure disponeteli a raggiera. 

Infornate per 25 minuti a 200 gradi.

Ingredients:

Vegan shortcrust pastry (see recipe here)
250 gr of organic cooked peas
500 gr of organic asparagus
3 tablespoons of nutritional yeast flakes
2 tablespoons of bread crumbs
2 tablespoons extra virgin olive oil
chili powder, salt and pepper q.s.

Prepare the shortcrust pastry and let it rest in the refrigerator at least 40 minutes (or use a roll of ready dough).

Meanwhile, wash, clean and boil the asparagus in lightly salted water for 10 minutes. Drain and put them in cold water and ice.
Heat the olive oil in a large skillet, then add the asparagus, brown them for a few minutes on high heat, season with salt and pepper. Keep aside.

Blend the cooked peas, add the nutritional yeast flakes, bread crumbs and chili, salt and mix well. If you have veg-goat cheese or another vegetable cheese you can add that too, in this way the cream of peas will be even more tasty!

Lightly oil a pan cake, sprinkle with bread crumbs, then roll out the pastry crust with a rolling pin and place them inside the mold so that it adheres well to the edges.

Fill with the cream of peas distributing it evenly.
Then cover with asparagus starting from the outside going inwards in a concentric way, or arrange in a radial pattern.

Bake for 25 minutes at 200 degrees.
