GNOCCHI BICOLORE AROMATICI - AROMATIC BICOLOUR GNOCCHI

Qui tutto bene, se tralasciamo che due settimane fa mi sono bloccata con uno stiramento alla schiena che mi ha tenuta 2 giorni inchiodata al materasso!
Ovviamente stavo prendendo in braccio Bianca, ma la mia risalita si è fermata a metà e sono rimasta piegata a 90 gradi come nel più telefonato dei film comici anni '80!
Appena successo ho riso tantissimo con mia madre, presente alla scena, per quanto mi sentivo ridicola: ridevo e più ridevo più il dolore mi toglieva il fiato e più mi veniva da ridere!
Assurdo :***)
Comunque non lo auguro a nessuno...
Tra l'altro con il sole che c'era fuori in quei giorni rimanere chiusa in casa mi ha fatto proprio arrabbiare :(

In compenso qualche giorno prima avevo fatto degli gnocchi viola e degli gnocchetti arancioni. 
Mi piaceva l'accostamento di un colore freddo e uno caldo e soprattutto dei due sapori: patate viola e farina di castagne per i primi, patate a pasta rossa e zucca per i secondi.
I gnocchi di patate viola sono più semplici perché quelli di zucca restano sempre molli vista la grossa quantità di acqua presente in questo ortaggio, quindi per cuocerli ho dovuto usare l'attrezzo per gli Spatzle. 
In alternativa si possono fare delle quenelle con due cucchiai e buttarli nell'acqua bollente uno a uno.


Questi gli ingredienti per 4 persone:

-gnocchi viola:
500 gr di patate viola bio
2 cucchiai di farina di castagne
2 cucchiai di farina 0

-gnochetti arancioni:
500 gr di patate rosse bio
1/2 zucca bio cotta senza buccia
200 gr di farina 0

-condimento:
Olio evo q.b.
Erbe aromatiche (salvia, alloro e rosmarino)

Lessate le patate viola, quando sono ancora calde schiacciatele con l'attrezzo apposta senza togliere la buccia che tanto rimarrà nell'attrezzo.
Unite le farine e un pizzico di sale e impastate bene con le mani fino ad ottenere un composto morbido, liscio e compatto.
Fate dei rotolini con piccole porzioni di impasto e tagliate i gnocchi della dimensione che preferite.
Disponeteli su un vassoio infarinato in attesa di cuocerli.
Non metteteli in frigo perché si smollerebbero!

Intanto preparate anche il secondo impasto.
Lessate le altre patate e schiacciatele come nel caso precedente.
Lessate la zucca per qualche minuto in acqua bollente (oppure, e forse è anche meglio, cuocetela nel forno, così sarà meno acquosa) e schiacciate anche quella, quindi miscelate il tutto con la farina finché otterrete un impasto liscio ed omogeneo, abbastanza colloso ma non troppo molle.
Se fosse necessario potete aggiungere farina, questo dipende molto dal tipo di patate e dalla zucca.

Preparate il condimento scaldando l'olio con le erbe aromatiche.

A questo punto lessate in acqua bollente salata i gnocchi viola, scolateli con una schiumarola e fateli insaporire nell'olio mescolando delicatamente.

Usando due cucchiai o l'attrezzo per gli Spaztle buttate in acqua bollente e salata anche i gnocchetti di zucca quindi scolateli sempre con un mestolo bucato man mano che vengono a galla e conditeli con l'olio caldo alle erbe.

Ingredients for 4 people:

- Purple Gnocchi:
500 gr of organic purple potatoes
2 tablespoons of chestnut flour
2 tablespoons of flour 0

- Orange Gnocchi:
500 grams of red potatoes bio
1/2 organic pumpkin cooked without skin
200 grams of flour 0

- Sauce:
Extra virgin olive oil q.s.
Aromatic Herbs (sage, laurel and rosemary)

Boil the purple potatoes, when they are still hot mash them with the tool without removing the skin that will remain inside.
Add the flours and a pinch of salt and knead well with your hands until the mixture is soft, smooth and compact.
Do rolls with small portions of dough and cut the gnocchi with the size you prefer.
Place them on a floured tray waiting to cook them.
Do not put them in the fridge because it become flabby!

Meanwhile, prepare the second mixture.
Boil the potatoes and mash them as in the previous case.
Boil the squash for a few minutes in boiling water (or, and perhaps even better, cook it in the oven, so it will be less watery) and mash it as well, then mixed it all with the flour until you get a smooth and homogeneous, but sticky enough dought.
If necessary, you can add flour, this depends on the type of potato and pumpkin.

Prepare the sauce by heating the oil with herbs.


At this point, boil the purple gnocchi in boiling salted water, remove them with a slotted spoon and let them cook in the oil, stirring gently.

Using two spoons or the tool to make Spaztle thrown into boiling salted water also the pumpkin gnocchi then drain with a slotted spoon as they rise to the surface and toss with the hot oil with herbs.
